Easy and Delicious Breakfast “Burritos”

Ingredients

  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 1 tbsp butter
  • 1 lb breakfast sausage roll
  • 12 eggs
  • 1/2 cup milk
  • 1 package taco seasoning
  • 10 medium flour tortillas
  • 2 cups cheddar cheese shredded
  • to taste sour cream
  • to taste salsa

Instructions

  • Dice the onion and green pepper and set aside.
  • Melt the butter in a deep-walled pan over medium heat. Add the onion and green pepper, and cook until just softened.
  • Add the sausage to the pan, break it up, and cook until no longer pink.
  • While the sausage is cooking, whisk the eggs, milk, and taco seasoning in a bowl.
  • Turn the heat to medium-low, add the egg mixture to the pan with the onion, green pepper, and cooked sausage. Cook, stirring pretty consistently until the eggs are set.
  • Scoop some of the egg mixture out onto a tortilla, then top with cheese, salsa, and sour cream. OR spread the sour cream on the tortilla first, followed by the salsa, egg mixture, and top with cheese. The world is your oyster! Build them in a way that makes you happy and your taste buds tickle 😉

Notes

We typically make these into tacos, but you can purchase larger tortillas and wrap them burrito style. You could also use small corn or flour tortillas. These also freeze well (as burritos) for a quick weekday breakfast or if you’re going camping. If you choose to make and freeze them, only wrap the filling and cheese inside of the tortilla. Save the salsa and sour cream for later. Also, brown them in a pan or on a flat-top grill for a crispy shell 🙂
