Easy Penne Chicken Parmesan
Shake 'n Bake meets fine dining with this Super Easy Penne Chicken Parmesan! Boil a pot of noodles, and everything else happens in a single pan. It's easy, it's good, and clean-up is a breeze! If you're looking for a meal that little hands can help with, this is the one 🙂
Servings: 4 people
Ingredients
- 16 oz. penne pasta
- 1 cup bread crumbs
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 egg beaten
- 2 chicken breasts cut into bite-sized pieces
- to taste olive oil
- 48 oz. pasta sauce
- to taste parmesan cheese
Instructions
- Cook pasta (al dente) according to the directions on its package. Drain, rinse, and return to pot, along with one jar of sauce. Put the burner on lowest setting to maintain heat.
- While water is boiling from step 1, mix the bread crumbs, garlic powder, salt, and pepper in a Ziploc bag. In a separate Ziploc bag, pour the beaten egg.
- This is a great step to have your kids help with: Add all of the cubed chicken into the bag with the beaten egg, seal it, and toss to coat. Then transfer the chicken to the bag with the breadcrumb mixture. Shake it to coat.
- Heat 1-2 tablespoons of oil in a 12-inch deep frying pan. Fry half of the chicken until golden on all sides (about 5 minutes per side). Add 1-2 more tablespoons of oil as needed. (If the pan dries up, the chicken coating won't brown properly.)
- Transfer cooked chicken to pot with cooked pasta, Then repeat process with remaining chicken.
- Add remaining sauce to the pan. Mix everything together and let it simmer for a few minutes.
- Sprinkle with parmesan and serve!
Notes
We like eating this pasta with a simple salad (greens, cucumbers, tomatoes, red onion, a little parmesan cheese, and ranch), and some garlic bread. Did you know garlic bread is SUPER easy to make? Check out my 3 ingredient recipe HERE. You’ll never buy it from the store again 🙂
